- 300 ml of mineral water
- 2 tablespoons of sugar
- ½ teaspoon of salt
- 10 grams of dry yeast
- 500 grams of flour (plus 2 tablespoons for the starter)
- 100 ml of vegetable oil
- 300 grams of cabbage
- 1 carrot
- 1 onion
- 2 tablespoons of vegetable oil
- 1/3 teaspoon of salt
- Peppercorns (black and allspice), to taste
- 1 bay leaf

Step-by-Step Instructions

Now that we have gathered all the necessary ingredients, let's dive into the process of making this delightful fasting cabbage pie:

 1. Preparing the Dough

To start, pour the mineral water into a container. Add the sugar, dry yeast, and mix well. It is important to use room temperature water for this step.

Next, add a couple of tablespoons of flour and stir until combined. Cover the container with a towel and let it rest in a warm place for approximately ten minutes or until you notice the characteristic bubble "cap" forming on the surface.

Once ready, add the vegetable oil to the mixture, ensuring it is odorless. Gradually incorporate the remaining flour, stirring thoroughly after each addition.

Use some vegetable oil to grease your hands and shape the dough into a ball. Cover it with a towel and let it rise in a warm place for about forty minutes.

 2. Preparing the Filling

While the dough is rising, let's prepare the savory filling for our fasting cabbage pie. Begin by finely chopping the cabbage.

Slice the onion into rings, keeping them relatively thick. Grate the carrot using a coarse grater. Heat two tablespoons of vegetable oil in a pan and add the onion. Stir and sauté for a couple of minutes until translucent. Then, add the grated carrot and continue stirring.

Now it's time to incorporate the cabbage, salt, black peppercorns, allspice, and bay leaf.

Stir well to ensure the spices are evenly distributed. Cover the pan with a lid and cook over low heat for approximately ten minutes or until the cabbage has softened. Once cooked, transfer the filling to a separate plate and allow it to cool.

3. Assembling and Baking the Pie

After the dough has risen, place it on a floured surface and divide it into equal portions. Take each piece of dough and flatten it into a round shape, resembling a small pancake.

Spoon the cooled filling onto each piece of dough, ensuring the center remains uncovered.

Pinch the edges together on both sides, leaving the center exposed. Place the prepared pies closely together in a baking dish.

By the way, feel free to experiment with different fillings, such as potatoes, rice, mushrooms, or even a sweet variation.

Cover the dish with a towel and let the pies rest for an additional twenty minutes in a warm place. Preheat the oven to 180 degrees Celsius. Brush the pies with vegetable oil to give them a golden-brown color.

Bon appetit!
